Made with only pasteurized sheep's milk, this delicate-tasting cheese owes its name "the red" to a surface treatment with tomato paste during its short maturation of about 60 days. Excellent alone or in a mixed platter with cold cuts for an aperitif or second course. Shipped already vacuum packed.
