OLIVE GROVE: the olive is born

Following the flowering, the fertilization of the flower takes place, thanks to a cross-pollination where it is necessary to have a pollinating olive tree.

In fact, only a small part of the flowers is destined to become olive, as most of the plants are self-sterile, wicht mean, they are not able to pollinate themselves.

Following pollination, the fruits begin to increase in weight and size until the end of October / early November.

The degree of ripeness of the grapes can be distinguished thanks to their coloring; from green for development to purplish black when ripe.
