After moving the Tistarelli oil mill location from the center of Sarteano to the current one and having opened a small resale of products; Mario and Donatella focusing on the research and quality of the product, arrive, in 1980, to produce the flagship product of their oil mill which will later be known as SIGNOROLIO.

In fact, in 1981 the trademark was registered to make it unique and recognizable. The name Signorolio derives from the grandfather Alessando called "the gentleman" and considered a great connoisseur of oil.

In contrast with the market in 1987 our oil mill decided to return to tradition by inserting a press crusher, choosing to produce a cold-pressed extra virgin olive oil.

Thanks to the return to the tradition of the previous year, in 1988 we began to produce Cinquemonti, a limpid and low acidity oil with a strong taste.

In 1990, the passion for researching innovative solutions such as the addition of a new mill with a hydraulic press allowed us to be faster in the production of Signorolio.
